Here's how to make Homemade Marshmallow Fluff:
You will need:
3 Egg Whites
150g Castor Sugar
2 Tbsp Golden Syrup
Pinch of Salt
1 Tsp Vanilla Extract
Method:
1. Put all the ingredients into a bowl over a pot of simmering water.
2. Beat with a hand mixer until it all combines and becomes white and fluffy.
3. Transfer the mixture into the bowl of a standing mixer and beat for 10 minutes, on high speed, until all the sugar has dissolved and it's light and fluffy!
Makes about 3 - 4 Cups of Marshmallow Fluff.
